500g fine sugar

Directions
Making the Citrus Syrup: Combine the listed ingredients inside a saucepan, heat until it reaches a gentle boil, stirring to dissolve. After that, take off the heat and leave to reach room temperature fully. Pour into a clean bottle, seal and refrigerate it in the refrigerator, where it will keep for around four weeks.
For the Batch Mix: Pour the specified liquid ingredients into a big jug, leave to sit for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's fully clarified.
To serve: Pour 85ml from the batch mix into a cocktail shaker packed with ice, gently stirring gently for one minute to chill. Pour to a chilled martini glass or equivalent, garnish with a few cranberries and finish with a quick spritz with the mandarin essence over the drink.
